The yeast has been officially tossed for Northern Lights Estates Winery.
Today (FRI) a group of dignitaries and members of the winery got to throw yeast onto the fruit that will be turned into wine.
Business Development Partner Pat Bell says this is an important step in setting up the winery.
 “When actually you’re making wine for the first time,” says Bell, “the must, which is the fruit, and the sugar and the water, and the nutrients, all the other things is nothing until the yeast is added, so when you sprinkle yeast for the first time its very special.”
Bell says it now takes three months for the wine to ferment and then it will take a couple of weeks to bottle.
Bell says they will do a soft launch of their facility on PG Pulpmill Road in early June.
He says they will also have a patio, picnic area and amphitheatre all ready to go by then.
